Chocolate Peanut Butter Cupcakes

Total Time Taken: 1 ½ hours

Yield: 12 Servings

Ingredients:

Cupcakes:

¼ cup smooth peanut butter

¼ teaspoon salt

½ cup butter, softened

½ cup sour cream

1 cup all-purpose flour

1 cup almond flour

1 teaspoon baking powder

1 teaspoon vanilla extract

2 eggs

Frosting:

1 cup heavy cream

1 teaspoon vanilla extract

2 cups dark chocolate chips

Directions:

To make the cupcakes, combine the butter and peanut butter in a container until creamy.

Put in the eggs and sour cream and mix thoroughly. Stir in the vanilla too.

Put in the flours, salt and baking powder and mix them using a spatula.

Spoon the batter in 12 muffin cups covered with muffin papers.

Preheat your oven and bake the cupcakes at 350F for about twenty minutes or until it rises significantly and seems golden.

Let them cool in the pan.

To make the frosting, bring the cream to a boil in a saucepan.

Turn off the heat and put in the chocolate chips. Stir until melted and smooth then allow to cool.

Spoon the frosting on top of each cupcake.
